A Turkey-Free Thanksgiving Dinner

What's for Thanksgiving dinner if not turkey? For something that's maybe sorta like turkey -- I can't vouch for it personally -- Jolinda Hackett (About.com Guide to Vegetarian Food) explains how to make tofu turkey. Good luck with that. If someone else wants to try it, let me know how it turns out.

Jolinda also has some Thanksgiving soup recipes that sound much tastier. I may try one of them myself.

Other foods that are savory and seasonal are sweet potatoes and winter squash, including pumpkin and my favorite, butternut. Here's a great main dish to make with butternut squash -- cut the squash up in one-inch cubes, season with savory herbs and garlic, and roast. Then toss the roasted squash cubes with pasta, a little butter and olive oil and shaved or shredded Parmesan cheese. Very yummy.

The New York Times is a great source for recipes that may be more interesting to read about than to try to cook, but I am intrigued by "Baby Salad Greens With Sweet Potato Croutons and Stilton." There's also a "Sweet Potato and Butternut Squash Soup" (you can substitute vegetable stock for chicken) and "Sweet Potato Puree With Apples."

So, what's for dinner?
